Roasted Chicken Pesto and Shiitake mushroom on Flat Bread

        So I was at Starbucks near Roxas Blvd a while ago. While eating my all-time favorite Roasted Chicken Pesto and Shiitake Mushroom on Flat Bread I realized, "I love this sandwich so much why don't write something about it?" Lol. I don't think I have to explain what's in it because c'mon, the name says it all. :) But for the others who wants to see what it looks like, here..


     

       This sandwich cost 165php, it might be expensive for some, but I think it's worth every penny. 
      
       The aroma and flavor of the chopped basil and olive oil is good. Adding roasted chicken to it makes it better.         
       
       To make your own Roasted chicken Pesto and Shiitake Mushroom on Flat bread from scratch, I'll give you one of my recipes. :)

        Ingredients


                  Focaccia bread or Panini bread *Any flat bread will do :)

                  Handful of fresh Basil
                  Chicken Breast with no skin intact (Fillet then cut into chunks or strips)
                  5 tsp olive oil
                  2 cloves of garlic, crushed
                  Shiitake mushrooms about a handful, chopped
                  Salt and Pepper

     Steps



                  1. Toast bread for about 2-4 minutes.

                  2. Chop basil into fine bits.
                  3. Prepare mortar and pestle.
                  4. Pound the crushed garlic and finely chopped basil. Pound until oil from the basil and garlic appear. 
                  5. Add 5 teaspoons of olive oil to create a paste and salt and pepper to taste. (yes, inside the mortar and pestle) Then, set aside.
                  6. For the chicken, roast it or fry it in olive oil. (Anything you want :D)
                  7. Then, fry in olive oil the chopped shiitake mushroom for about 2 minutes. 
                  8. When everything is done, assemble! Bread, basil paste, shiitake mushroom, chicken the the bread again. :)
